menu_book Directions

Prepare the Eggs:
  • Start by boiling 4 eggs. Add an inch of water to a pot, cover, and bring to a boil. Add eggs straight from the fridge and boil for 6 minutes. Then, cool them in an ice water bath or under running water.
Mix Sausage and Herbs:
  • While the eggs cool, mix your sausage and chosen herbs. If the sausage sticks to your gloves, dust your hands with flour—it’s just like handling leather pants, but stickier!
Wrap the Eggs:
  • Peel the cooled eggs carefully, then wrap each one in the seasoned sausage mixture. Make sure to evenly distribute the sausage for a consistent wrap.
Egg Wash and Crumb Coating:
  • Beat the remaining two eggs for the wash. Dip the sausage-wrapped eggs in flour, then into the egg wash, and finally coat them generously with breadcrumbs.
Cooking:
  • Oven method: Preheat to 350°F and bake for about 13 minutes, until golden.
  • Frying method: Heat oil to 375°F and fry until crispy and golden.
