Spiced Rum Sauces

kitchen Ingredients

1 cupHeavy Whipping Cream
¼ cup Salted Butter
1⁄2 cup White Sugar
2 w. Egg Yolks
¼ tsp Vanilla
3 Tbsp Spiced Rum

Make the caramel:
  • Heat sugar in a saucepan over medium heat. Stir the edges into the center as the sugar melts, until mostly dissolved.
  • Add butter and stir until melted. Cook for a few minutes more, stirring occasionally.
Add cream and cool:
  • Remove the pan from heat. Slowly stir in heavy cream. Don't worry about clumps – they'll dissolve with heat.
Temper the yolks:
  • Whisk egg yolks in a large bowl.
  • Gradually add some warm sauce to the yolks while whisking constantly. This will temper the eggs and prevent them from scrambling.
Finish the sauce:
  • Pour the egg mixture back into the saucepan with the rest of the sauce.
  • Add vanilla and 2 tbsp rum.
  • Return to heat and stir until it begins to boil. Immediately remove from heat and stir in 1 more tsp rum.

Old Fashioned Sauces

Old Fashioned:
1 cup Heavy Whipping Cream
¼ cup Salted Butter
1⁄2 cup Brown Sugar
2 w. Egg Yolks
3 Tbsp Rye Whiskey
Zest of Orange and Lemon

Combine ingredients:
  • In a saucepan, combine heavy cream, butter, agave nectar, sugar, lime zest, lemon zest, and a little orange zest. A bit of bitters adds a nice complexity.
Heat and dissolve sugar:
  • Place over medium heat and stir until the sugar dissolves. Add 2 tbsp of the mixture as you go to keep things smooth. Let it simmer.
Temper the eggs:
  • Whisk egg yolks in a bowl. Gradually whisk in some warm sauce while constantly whisking.
Finish the sauce:
  • Pour tempered egg mixture back into the saucepan.
  • Add 2 tbsp tequila.
  • Bring back to a simmer while stirring constantly. Remove from heat and stir in another tbsp of tequila.

Margarita Sauces

1 cup Heavy Whipping Cream
¼ cup Salted Butter
4 Tbsp White Sugar
2 w. Egg Yolks
2 Tbsp Agave Nectar
1 Tbsp Margarita
3 Tbsp Tequila
Zest of Lemon Lime and/or Orange
Salt ?

  • Heat brown sugar and honey in a saucepan over medium heat. Stir edges into the center as sugar melts, until mostly dissolved.
  • Add butter and stir until melted. Let it simmer.
Add flavors:
  • Stir in heavy cream, a generous amount of orange zest, some lemon zest, and cook for 5+ minutes, stirring to develop the citrus flavors.
Temper eggs and finish:
  • Whisk egg yolks in a bowl, then gradually temper with warm sauce while whisking.
  • Pour tempered egg mixture back into the saucepan.
  • Add vanilla and 2 tbsp whiskey.
  • Bring back to a simmer, stirring constantly. Remove from heat and stir in another tbsp of whiskey.
